Ragi is totally something new to me and I simply picked it up as a challenge to try different recipes. Ragi or Finger Millet has a distinct taste and is widely used in Southern Indian and Ethiopian dishes. Ragi is a rich source of Calcium, Iron, Protein, Fiber and other minerals. The cereal has low fat content and contains mainly unsaturated fat. It is easy to digest and does not contain gluten; people who are sensitive to gluten can easily consume Finger Millet. Ragi is considered one of the most nutritious cereals. It has different names in local languages. It is known as Ragi in Telugu and Kannada, Kelvaragu/aariyam in Tamil, and Madua/Mangal in Hindi.
Today I wanted to share a simple breakfast porridge called Ragi Malt which is very popular in South India. Usually its make with milk and sugar/jaggery and topped with nuts (optional). But as always I wanted to do a little twist included almond meal and it was yummers. For past 3-4 days I have been having this as a breakfast porridge and it totally makes me so full and I don't feel hungry for like 5-6 hrs straight. Trust me i dread oats and cereal I rather have Ragi, its so good, only if you try it will you know.
Ingredients
Milk - 2 cups ( I used fatless)
Ragi flour- 2 tbsp
Almond meal - 2 tbsp (optional)
Sugar/jaggery - 1 tbsp or more (I used dark brown sugar)
Serves ~ 2
Cook & prep time ~ 10 mins

Whole raisins/ nuts - to garnish (optional)
Cardamom powder - a generous pinch
Method
- In a sauce pan boil 1.5 cups milk, with the remaining milk add ragi flour and almond meal and mix well without any lumps. Add this to the boiling milk and let it cook for 5-6 minutes until nice and thick.
- Now switch off add jaggery/sugar and cardamom powder mix well.
Serve in a bowl or cut topped with dry fruit & nuts
Cooks Wisdom
- remember to mix ragi flour with milk before adding it to the boiling milk else lumps will form.
- reduce milk with ragi mixture for 5 minutes so that the raw taste goes away
- you can add saffron if you like the taste of it
- this ragi malt was little thich you can use half and half of milk and water
- adding cardamom powder is optional
- you can add any sweetening agent like honey, stevia or agave nectar

ReplyDeleteThis is the food we give to the kids after choruunu (acutally the first solid food for kids). My little daughter loves it a lot. She is two yrs now and still likes to have it once in a while. Two ways of cooking this - one with milk +sugar or jaggery, the other with water +ghee+sugar or jaggery. Both tastes good.
